Bananas are one of my favourite fruit to eat by itself, but put them in a cake and they are amazing!!
Include butterscotch or fudge pieces in the mix and...well, you'll just have to bake it yourself.
Banana and Butterscotch/Fudge Loaf Cake
225g Self Raising Flour
¼ teaspoon Bicarbonate of Soda
½ teaspoon Salt
75g Salted Butter
175g Caster Sugar
2 medium eggs, beaten
450g Ripe Bananas, weighed with the skin, peeled and mashed
50g Butterscotch chips or Fudge pieces
Heat Oven to 180°C, 350°F, Gas Mark 4. Grease and line a ½ kg (1 lb) loaf tin
Sift together the flour, bicarb and salt
Cream the butter and sugar until light and fluffy. Add the eggs a bit at a time, alternatively with most of the flour
Stir in the rest of the flour, along with the bananas. Carefully fold in the butterscotch chips/fudge pieces
Place mixture in the tin, level off. Bake on the middle shelf for 1¼ hours

Yes, eaten a quarter of it already, so nice.
